Val Brunton from the Sunflower Restaurant has launched the 2nd cook book in her Sunflower Kitchen Series. This time the emphasis is on healthy eating vegetarian food which is designed to inspire even the most committed carnivore to give it a try.

 Val who runs the Sunflower Restaurant in Peebles is committed to using fresh produce in all her cooking and the relaxed dining style in the restaurant has helped built up a regular and loyal clientèle.

 Her passion for natural flavours and her flair for creating exciting new dishes has resulted in a very special vegetarian cookery book. The book has been inspired by her travels throughout the world and she has brought together dishes that combine colours, textures and most of all taste. The book has wonderful vibrant illustrations by local Peebles artist Irene Campbell which compliment the recipes and design of the book perfectly.

 Val’s vegetarian journey started when she was a young girl which was a particularly difficult decision especially as her father was a cattle breeder. Val has worked in several hotels and restaurants in the Scottish Borders and her dream of becoming a restaurant owner finally came true when along with her husband Andrew they purchased the Sunflower Restaurant in August 1999.

 The Sunflower Kitchen – Vegetarian Food Book was launched by Val at a special celebration at the Sunflower Restaurant on Tuesday 26th August. The event was attended by many regular customers of the restaurant along with the main contributors to the book – HG Design who designed the book, Caledonian Printers who printed the book, Kenny Martin who took the photographs and of course illustrator Irene Campbell.
